Mahon Chicken Casserole by Barbara Shiells
Casseroles are a staple dish in almost every household; they are easy to throw together, comforting and filling, and perfect for leftovers or feeding the masses. It is no different in Spanish culture – in fact, their love for rich spices and fresh ingredients take casseroles from hearty evening meals to a culinary delight time and time again. This Mahon Chicken Casserole by health and fitness expert Barbara Shiells is simple, healthy and delicious and is sure to become a firm household favourite.
Mahon Chicken Casserole
Time: 1 hr 20 mins
- knob of butter
- 1 onion, finely chopped
- 3 medium carrots, finely chopped
- 2 medium sticks celery, finely chopped
- 500g of chicken thighs
- 2 large garlic cloves, crushed
- 1 tsp sweet smoked paprika
- ½ tsp ground cumin
- 1 tsp dried thyme
- 2 x 400g cans chopped tomatoes
- 1 chicken stock cube
- 1 red or orange pepper, diced
- Heat the butter in a large heavy-based pan. Add the onion, carrot and celery and cook gently until softened.
- Add the chicken thighs, garlic, spices and thyme. Cook stirring until the chicken has browned.
- Pour in the tomatoes, plus one extra can of water or enough to cover the chicken and vegetables.
- Add the stock and pepper. Bring to a simmer and cook uncovered for 50 mins.
Serve with brown rice and vegetables for a side filled with fibre, or with savoy cabbage and green beans if watching your carb and calorie intake.
This dish stores easily so double up the quantity and freeze individual portions for a healthy ready meal when you’re short on time.
